Summertime = BBQ! Grilled Salmon & Sweet Potatoes

I love the summer. The 2 main reasons are the great weather and the great food! Firing up the BBQ and cooking outside is a great way to combine the 2. Making grilled salmon, ribs, burgers and more really gets summer going!

So now that summer is in full swing, it’s time to bust out the grill and get creative!

Product and/or compensation was provided by the great people at Sam’s Club.

Deciding what to BBQ is almost as much fun as cooking on grill. When I need some inspiration, I simply run to my local Sam’s Club. Just looking at all the options available, including a huge selection of Sam’s own private label brand, Member’s Mark gives you all the inspiration you could ever need.

Over the past year, Member’s Mark has added 300 new items to the line, giving them over 2,000 products. This provides you so many unbelievable options, and even better than having all the options is how much you can save!

So as I was walking through my Sam’s Club, my attention immediately turned the meat department. So many incredible options and many of them are Member’s Mark products. I was checking out the seafood, Member’s Mark has multiple options for fresh Sockeye salmon and tilapia, which looked incredible.

Next, I turned to the ground beef and dreamed of making the best burger ever! Then the ribs were right around the corner, and I could just smell the ribs cooking on the grill. All of these tasty options were offered by Member’s Mark and provided plenty of inspiration.

I ended up going with the salmon from Member’s Mark. Also in the foods section is an entire selection of pre-made meals like burritos, salads, twice baked potatoes & much more. I made sure to pick some of these up for other days of the week. I was thrilled to learn that Sam’s Club has worked with product developers and food scientists who have travelled the world to source the best in class ingredients and processing methods. All of their products are top quality and in my opinion are able to rival some of the top national brands.

As I was going thru my Sam’s Club, I also picked up some sweet potatoes and a couple of other Member’s Mark items. Everywhere you turn, you are able to find a national brand, along with a more competitively priced Member’s Mark product. I gathered up the rest of my ingredients for our first BBQ meal of the year, and left Sam’s Club with about 10 other ideas for what to cook next!

If you don’t have much time to shop at Sam’s Club, make sure you use their Scan & Go app or use their Store Pickup Service too!

I stepped up my grill game this time. I went with the Sockeye salmon and made a side of grilled sweet potato slices. Check out our recipe and see if your BBQ game is on point!

Grilled Salmon

1 Member’s Mark Sockeye salmon filet
1 Tsp black pepper
1 tsp Member’s Mark Himalayan Salt
1 tsp parsley
4 tablespoons butter – melted
¼ bbq sauce

Pre-heat grill to med-high
Mix salt, pepper, parsley, and butter.
Brush your mixture onto the salmon
Oil or spray your grill
Cook salmon for 12-14 minutes, checking until it is cooked all the way through and flakey. Time may vary based on thickness of the salmon. With about a 5 minutes left, brush the BBQ sauce onto the salmon – do not over do it, just a nice glaze for a little extra zing of flavor!
Once salmon flakes easily with a fork, you are done!

Grilled Sweet Potatoes

5 sweet potatoes – sliced (thinner the better)
Member’s Mark Olive Oil
Member’s Mark Himalayan Salt
Pepper

Cutting the sweet potatoes is a little tricky, try to get thinner slices, but be careful cutting them. Once you have your slices rub them in olive oil, add salt and pepper to your own preference.
Add them to the grill. I have made sweet potatoes on the grill a ton of times, I have had had guests prefer them softer and guests who prefer them with a little more of a crisp snap to them.
With the grill on med-high place potato slices on the grill, at 6 minute mark flip them. Let them sit for another 5 minutes, you will get nice grill marks on them, and depending on the thickness, you may want to leave them on another minute or 2 in order to soften them up some more.

Take both items off the grill, plate them on your Member’s Mark paper plates and enjoy with your family. As you eat, sit back and take in all of the compliments!

I haven’t tried grilled salmon or sweet potatoes before. I usually have baked sweet potatoes and oven baked salmon. This looks really good and I will give it a try.

I love having Salmon! I usually pan-fry it. Might be difficult on the grill but I’d give it a shot.

I cannot get my kids to enjoy sweet potatoes no matter what I do with them. I appreciate this great looking post however.
