7 Scrumptious Summer Salads

I just read that the 2nd most popular New Year’s Resolution is to eat healthy food. I know it’s on my list and Dave’s as well. One of the ways I plan to do this in 2013 is by eating more salads. I really enjoy them but generally don’t give myself enough time to make them. I decided to put together a collection of delicious salad recipes in this post for easy reference whenever lunch or dinner ideas are needed.

These salads all are hearty, filling, and full of flavor. They are pretty easy to prepare and there are not usual or hard to find ingredients. This collection of salads is an enticing way to work toward the goal of eating healthy this year. Enjoy!

    They all look amazing…i make tomato and cucumber salad all the time never thought to add jalapeno peppers definitely going to spice it up ;) and give it a try

    The mozzarella-tomato-avocado salad looks delicious. I love Greek salad, and often make it with Israeli couscous instead of romaine.

    I really don’t like eating salad out of a bowl much but put it in a wrap or pita and I’m on it. I like to add spinach or kale, some type of lean meat, and all the veggies I can, fresh or sauted!

    Mmmmm Yummy! I love when foods are both healthy AND still delicious. I think the first 2 recipes would be my personal favorites. I always love sweeter salads too like chicken breast with fruits and raspberry vinaigrette and nuts for example.

    I love salads that have baby spinach in it! My favorite is probably a spinach salad with asian dressing, toasted almonds and sesame seeds, tons of avocado, julienne carrot (I love your carrot curls in one of the recipes above!), sautee chicken or beef strips, asian peas, maybe some sprouts, etc., etc.! Lots of flavor and crunch.

    Very cool! I love goat cheese – one of my favorite salads is warm goat cheese salad. You take goat cheese and make small discs and bread them and bake them. The inside gets gooey and the outside is crunchy. You put these on top of a salad of spinach, chopped up pear, walnuts, and dressing! So good!

    My favorite kind of salad is one that someone else makes. I don’t know why, but it always seems to taste better if someone else makes it.

    They all look scrumptious! My favorite salad to have is a wilted spinach salad with a warm bacon vinaigrette dressing and I also love grilling romaine lettuce with a balsamic dressing.
