Delicious Pumpkin Mac & Cheese Recipe

This time of year has me thinking all things pumpkin. Everything seems to be flavored with pumpkin these days, which makes me very happy. I love a good pumpkin spice latte or adding pumpkin flavored creamer to my coffee. Pumpkin bread and cookies always hit the spot. And I can never eat just one pumpkin brownie. I was in the mood recently to make something different. I grabbed a can of pumpkin and a box of macaroni and cheese. I combined the two and couldn’t believe how easy, simple, and amazingly delicious this dish was!

Pumpkin Mac & CheeseI liked this dish so much I’ve eaten it quite often since. You can make this pumpkin mac & cheese recipe with any kind of macaroni and cheese: homemade, boxed, bagged, etc. In fact, I have been using a box of organic mac and cheese to give the dish an even healthier spin.

I have to be honest and to say that for years I always wanted to try making pumpkin mac and cheese at home. I always thought it would be complicated and tricky and every year fall would pass and I never had a chance to try it. That’s why I’m thrilled to have discovered how easy this recipe is and I’ve been enjoying it so much since.

Ingredients

  • Organic boxed mac & cheese
  • 1/2 cup milk
  • 1/2 cup 100% pure pumpkin
  1. Follow the directions on the box to prepare the mac & cheese.
  2. Add 1/2 cup extra milk.
  3. Stir in pumpkin
  4. Serve warm and enjoy

    Wow – this sounds terrific – and much healthier! I have so many boxes of mac and cheese and canned pumpkin – it never occurred to me to try putting them together, even though I like the books about “sneaky” chefs – who sneak veggie and fruit puree into everything. Must try asap!

    I think this is an easy (and tasty) way to pump up the nutritional value of a kid favorite. I have been seeing a lot of interesting pumpkin recipes this year.

    I’m not sure about this, but usually when I say things like that about something I haven’t tried, I end up loving it. I’ll give it a try since the other recipes I’ve tried from you have been all very good!
