Easy Summer Party Sandwiches

One of my favorite things about summer family get togethers is a sandwich my mom always makes. It’s fresh, flavorful, and light – perfect for summer! Recently we had a birthday party for my dad and were trying to figure out a menu. While it’s the middle of winter I thought it would be fun to serve these easy party sandwiches again. I made it to surprise everyone and when I put it on the table, they couldn’t wait to dive in.

This recipe is very simple and only takes a few minutes to prepare. The part that takes the longest is chopping the cucumber and tomato. You can cube cheese as well or buy it cubed, either way it’s delicious. I can’t wait to make this again and bring a bit of summer to our crazy Michigan winter!

Easy Party Sandwiches

Ingredients

  • 2 medium cucumbers
  • 3 medium tomatoes
  • 1 cup of cubed cheese
  • 1 1/2 cups of ranch dressing
  • 1/4 cup of dill seed
  • Hamburger buns or slider buns

Instructions

  1. Chop cucumbers and tomatoes and place into a large mixing bowl
  2. Pour in ranch dressing and dill seed, mix well
  3. Spoon veggie mix onto buns to make sandwiches
  4. Serve and enjoy!
