Sparkling Cranberry Brie Bites

The picture above is from our Thanksgiving last year. Isn’t it such a festive appetizer? It would be perfect at an holiday get together. We found the recipe so delicious that we look forward to making it every year. In fact, this is one of my favorite holiday recipes. It’s so pretty that it always gets compliments and honestly whenever we make it I have to stop and take a few photos!
Sparkling Cranberry Brie Bites

While it’s surprisingly easy to make, you do need to give yourself enough time to allow the cranberries to soak overnight. When properly sugared, they become the star of the dish and are full of flavor and sweetness.

You can make your own relish or you can buy it at the store. We prefer to make our own, but when crunched for time the store bought version stands in just as well. Assembly only takes minutes especially if you have a helper or two. This recipe is sure to grab attention at your next holiday party and I hope you enjoy it as much as we have over the years!

Ingredients

  • 1 bag of fresh cranberries
  • 1 orange, zested
  • 1 cup maple syrup
  • 1 3/4 cup white sugar
  • 32 holiday crackers
  • 8 oz Brie cheese
  • Fresh mint leaves

Instructions

  1. Rinse cranberries and put them in a bow. Cover with sugar and maple syrup. Mix well. Cover and let soak in teh refrigerator over night.
  2. Add cranberries, orange pulp, and zest to food processor. Pulse until well chopped. Add sugar and pulse quickly. Pour into a bowl.
  3. Place crackers on a platter. Top each cracker with a small slice of Brie. Spoon a small amount of cranberry relish on Brie. Top with sugared cranberries and then one or two mint leaves.
  4. Serve and enjoy!

    These look really yummy. I love the sugared cranberries – the sugar makes the cranberries look so much more festive. I’m definitely bookmarking this for next Christmas when cranberries are back in season.

    These will be perfect for my New Years Eve party! I often make baked Brie wrapped in phyllo but these bites will be much more “user friendy” – no fighting over the cheese knife! :)

    Wow, these look great. And I love brie! I used to “make” a brie “recipe” that was just warming up brie in the oven with almonds on top. Yes, I got it from a recipe; I don’t cook. LOL!
