Peaches & Cream Mini Muffins Recipe

My parents are visiting for the 4th of July weekend and one of my mom’s favorite summertime treats is peaches. She loves peach crisp, peach crumble, peach pie, and canned peaches. That’s why I wanted to surprise my mom with a special peach recipe while they were visiting and I thought I’d give peach muffins a try.

Kora loves to bake and it was the perfect opportunity to get her involved as well. Now that she’s 7 I felt she was old enough to tackle her first recipe all on her own (except for the parts involving the oven). So I wrote out the recipe, got her set up, and let her go.

Peaches & Cream Mini Muffins RecipeThese muffins are delicious and the peaches add a wonderful summer flavor. When my parents arrived we gave them each a muffin and they were impressed that Kora made them and commented on how delicious they were. My mom, of course, loved the peaches and was excited that we made them for her. These muffins were a big hit and we have a few left right now but as soon as they’re gone Kora & I can’t wait to make them again and even try the recipe as a bread.

Here’s the recipe, we hope you enjoy it as much as we do!

Peaches & Cream Mini Muffins Recipe

Peaches & Cream Mini MuffinsServing size: 36 Mini Muffins

  • 2 eggs
  • 1 cup Del Monte Yellow Cling Peach Chunks
  • 1 container peach Greek yogurt
  • 1/2 cup vegetable oil
  • 1/2 cup of milk
  • 3 cups all-purpose flour
  • 1  cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract

Directions

  1. Preheat the oven to 350 degrees. Coat 3 mini muffin tins with cooking spray.
  2. In a large bowl, beat eggs. Then add yogurt, oil, and milk. Mix well.
  3. In another large bowl mix flour, sugar, baking powder and salt.
  4. Pour the eggs, yogurt, & oil into the flour mix. Stir well.
  5. Add in the peaches and mix.
  6. Pour batter into muffin cups until three-fourths full.
  7. Bake for 25 minutes until a toothpick comes out clean.

    What size container of peach Greek yogurt did You use?

    Please advise.

      From what I have found online, your average greek yogurt is 6 oz.

      I also have some questions..
      Are the peach chunks drained? When do add the vanilla? This sounds and looks like a great recipe if it was complete for us to follow. Please fix it! :)

    Sounds good to me. Your daughter reminds me of me at that age. My mom taught me how to bake from scratch. It was fun at that age. My specialty was yellow cake with white icing. Only because it was mu step dads favorite. Thank you for the recipe.

    Love that the two,of you and I am sure your son too get to bake with you. Never did that except for a birthday cake with my mom. I never ate a peach dessert of any sort.

    I love anything with peaches. I’d also be tempted to replace the canned stuff with fresh Georgia peaches, at least during the summer.
