Easy Zucchini Bread Recipe

Easy Zucchini Bread RecipeRecently I wrote a post about how we are being overrun with zucchini. Our garden is doing well and we have more zucchini than we know what to do with. The good news is I’ve found lots of great recipes lately and have been enjoying giving them all a try. I’m not sure if my waistline agrees, but zucchini is a vegetable so no matter what it is in, it’s got to be healthy right?

I was excited about this easy and delicious recipe, it is delicious!

Here’s some photos of the recipe in progress. Kora & Logan loved helping. I’m not sure which they liked better grating the zucchini or sneaking a few chocolate chips every now and then!

Easy Zucchini Bread Recipe

  • 3 eggs
  • 3/4 cup of vegetable oil
  • 1/4 cup of natural applesauce
  • 2 cups of grated zucchini (don’t drain)
  • 3 tsp of vanilla extract
  • 3 cups of flour
  • 2 1/2 cups of white sugar
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp nutmeg
  • 1 tsp salt
  • chocolate chips

Directions
1. Preheat oven to 350 degrees and grease one large loaf pan.
2. Cream together wet ingredients and sugar.
3. Add dry ingredients and blend together.
4. Pour batter into prepared pan.
5. Bake for 20 minutes then gently add chocolate chips on top.
6. Bake for an additional 30-40 minutes or until toothpick inserted in center comes out clean.
7. Cool in pan for 20 minutes before removing, then eat and enjoy!

*Note: You could also put the chocolate chips in the batter. Truthfully, that was my original intention but I forgot them until the bread was already in the oven for 20 minutes! On top or in the batter, either way the chocolate chips give this zucchini bread a tasty twist.

    I just made this recipe. First time ever making zucchini bread, and it is really good. I’m wondering if the fact that I used homemade applesauce is what is making it so sweet. Plus, it has a hint of apple flavor to it. :) Thanks for posting this!

    I love zucchini bread and have even used summer squash in place of it.

    With this recipe can I just add more applesauce in place of the oil?

    I had never had zucchini bread until last year and fell in love! Add in chocolate and that makes it even better!

    I like that this recipe uses applesauce for a little extra moistness. My kids would love a zucchini bread with chocolate chips in it!

    This looks so yummy!! However would you mind sharing what kind of chips you used for the top in the picture because those definitely don’t look like chocolate chips :)

      They’re swirled chips. Vanilla and chocolate swirl that got darker as they cooked.
